Asian-Inspired Chicken & Rice

Some nights you just need dinner to be effortless. As in, that delicious, no-brainer dish that doesn’t require a recipe because it’s so ingrained in your mind. This Asian-inspired version of chicken and rice is my weeknight go-to because it only takes a few ingredients to give those sometimes bland staples a spicy twist. What’s your effortless meal? Honey Teriyaki Chicken Thighs


  • 6 Boneless, skinless chicken thighs
  • 3/4 cup Teriyaki sauce
  • 1/2 cup Honey
  • 1/2 cup fresh Ginger, sliced into coins (Tip: Use a spoon to peel the ginger)
  • 1 tsp red pepper

  • Combine all ingredients in a zip-top bag and marinate in the refrigerator for at least half an hour.
  • Preheat oven to 400. Place chicken and marinade in a baking pan and bake until done, about 30 minutes.

Rice with Cashews and Scallions


  • 1 1/2 cups Jasmine rice
  • 3 cups water
  • 1/2 stick butter
  • 1/2 cup Cashews (crushed)
  • 1/2 cup Scallions (chopped)
  • Salt & Pepper


  • Cook rice with water and half of the butter according to package directions.
  • Saute the cashews and scallions in the remaining butter. Note: If you’re in a hurry, skip straight to step 3.
  • Mix cooked rice with cashew and scallions all together.
