Cake in a Mug: Gingerbread Cake

Gingerbread is a holiday staple but it is time-consuming. Our version is a riff on the original that takes less than 10 minutes because it bakes in the microwave! And since each is an individual serving, made in my Effortless Table mugs, you don't have to worry about eating the entire cake. So go ahead, use those extra calories to indulge in some delicious toppings. I'm not looking!

Super Fast Gingerbread Cake in a Mug

  • Yields 1 Cake
  • 5 Minutes Prep Time
  • 1 Minute Cook Time
  • For the Cake:
  • 2 tsp butter (about ½ tbsp pat, cut in half)
  • 1/8 tsp ground clove
  • 1/8 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ c flour
  • 1/4 tsp baking powder
  • 1 tbsp light brown sugar
  • 3 tbsp milk
  • For the Toppings:
  • caramel sauce
  • ice cream
  • whipped cream
  • extra Cinnamon
  • Directions:
  • 1. Put the butter in the mug and microwave for 15-20 seconds, just to melt.
  • 2. Add the remaining ingredients and whisk together with a fork until completely combined. Microwave for 1 minute.
  • 3. Immediately top with ice cream, whipped cream, and extra cinnamon. Enjoy!
