One-Pan Chicken and Vegetables

  • Ingredients
  • 1 3-4 lb. chicken, cut in 8 Pieces
  • ¼ cup olive oil
  • 4 sprigs fresh oregano, chopped or 1 tsp. dried
  • 1 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1 tsp. ground chili powder
  • 1 head cauliflower, cut into 1 ½ inch Chunks
  • 1 Yellow onion, sliced in ½-inch pieces
  • salt and freshly ground pepper

  • Directions
  • Place the chicken in a ziptop bag.
  • In a small bowl, whisk together the olive oil, oregano, cumin, cinnamon, and chili powder. Add a big pinch of salt and pepper. Pour half of the mixture into the bag and toss the chicken to coat.
  • Marinate the chicken for at least an hour and up to overnight. Toss the remaining mixture with the cauliflower pieces and onion and set aside.
  • Preheat oven to 400 degrees F.
