From The Chew: Spicy Watermelon Salad

This surprising watermelon salad is zesty and refreshing and pairs perfectly with any barbecue dish. You’ve got salty, you’ve got sweet, you’ve got citrus, you’ve got mint—it’s delicious! I grow the mint in my garden to make it at home, so my spicy watermelon salad is perfect for a hot summer day!

Spicy Watermelon Salad

Spicy Watermelon Salad

Ingredients

  • 4 cups cubed seedless watermelon (1 inch cubes)
  • 2 jalapenos (thinly sliced)
  • 4 cups baby arugula
  • 1 cup mint leaves (chopped, plus more for garnish)
  • 1 orange (zest and juice)
  • 2 limes (zest and juice)
  • 1/4 cup extra-virgin olive oil
  • salt and freshly ground black pepper
  • 8 ounces crumbled feta

Directions

  • To a large bowl, add the watermelon, jalapenos, baby arugula and mint. Reserve a few jalapenos on the side for garnish.
  • In a separate bowl, whisk together the juice and zest of an orange, the juice of 2 limes and olive oil. Season with a pinch of salt and some freshly cracked pepper. Pour over the watermelon mixture and toss to evenly coat.
  • Transfer the watermelon salad to a serving platter.
  • Garnish with feta, reserved jalapeno slices and a few more mint leaves. Finish with a drizzle of extra virgin olive oil.
