Grilled Tomato Mozzarella Pizza

Cherry Tomato, Mozzarella, Basil & Parmesan Pizza

Ingredients

  • 1 ball store-bought pizza dough
  • 1 pint cherry tomatoes
  • 1 tbsp olive oil, plus more for dough
  • salt and pepper
  • 6 oz bocancini or mozzarella, cut in bite sized pieces
  • ¼ c loosely packed basil leaves
  • 3 tbsp parmesan cheese, grated or shaved

Directions

  • Heat your grill to medium heat.
  • Place the cherry tomatoes on a sheet of foil and drizzle with the olive oil. Seal and place on the grill to cook while you make the dough.
  • Using your hands, or a rolling pin, stretch pizza dough into a round about a 1/4 inch thick, making sure there is no lip, and the dough is evenly flat.
  • Oil your grill, and brush the top of your pizza liberally with oil. Place the dough, oil side down, on the grill, and let it cook until it begins to crisp and char, 6-7 minutes.
  • Once you have flipped the dough over and have cooked one side, top the charred side of the dough with the pieces of mozzarella. Close the lid of the grill and cook 2-3 minutes, until dough is cooked through and cheese has melted. Remove the tomatoes and very carefully open. Spoon the tomatoes over the pizza and top with basil and parmesan cheese. Cut into slices and serve.
Grilled Pizza Asparagus Mozzarella

Asparagus, Onion and Ricotta Pizza

Ingredients

  • 1 ball store-bought pizza dough
  • ½ lb asparagus, trimmed
  • ½ vidalia onion, thinly sliced
  • 2 tbsp olive oil, plus more for dough
  • salt and pepper
  • ½ c ricotta
  • ½ tsp red pepper flakes
  • 1 tbsp honey

Directions

  • Heat your grill to medium heat.
Flip and close the grill, cooking the dough another 2-3 minutes, until second side is slightly charred and dough is cooked. Remove from grill to top.
  • Brush or drizzle the asparagus and onion slices with olive oil and season with salt and pepper. Grill alongside the dough, until lightly charred. Remove from grill and cut the asparagus into bite-sized pieces.
  • Spread the ricotta over the dough and top with the asparagus pieces and onion. Drizzle with honey and sprinkle with red pepper flakes. Cut into slices and serve.
