Slow Cooker: Delicious Chicken and Vegetables

There's nothing like a bowl of hot chicken and vegetables to get you through the long and cold winter months. With only 15 minutes of prep, the slow cooker does all the work, packing flavor into this healthy dish. Pass it around family style—it’s good for the soul.

Delicious Chicken and Vegetables

  • Serves 4-6
  • 15 Minutes Prep Time
  • 4 Hours Inactive Cook Time
  • Ingredients:
  • ½ lb. carrots, peeled and cut in 1-inch pieces - or baby Carrots
  • 2 lb. boneless, skinless chicken thighs
  • 3 shallots, cut in half
  • 2 cloves garlic
  • 1 bunch kale, torn from stems
  • 1 8 oz package button or cremini mushrooms, sliced
  • ½ tsp. dried thyme
  • 1 bay leaf
  • salt and pepper
  • 1/2 cup dry red wine (like Shiraz or Malbec)
  • 2 cups chicken broth or stock
  • ¼ cup fresh parsley, chopped, to garnish

  • Directions:
  • In a slow cooker, combine everything but the parsley. Cook on high for 4 hours, or low for 6 hours.
  • Remove chicken from sauce and shred, then add back into the slow cooker and stir gently to combine with sauce and vegetables. Spoon onto plates and garnish with freshly chopped parsley.
