This No-Bake Lemon Vanilla Freeze is Sweet, Tart & Tipsy

It’s still too damn hot to be spending any time baking. So we created this delicious dessert for you: If key lime pie and my signature berry trifle had a baby, this would be it. Of course we added a splash of booze - refreshing limoncello – to layers of rich vanilla ice cream and lemon curd, then topped it all with tart raspberries and crunchy vanilla wafers to make every bite a flavor explosion.

Lemon Vanilla Freeze

  • Yields 4 servings
  • Prep time: 10 minutes

Ingredients

  • ¼ c limoncello
  • ½ c lemon curd
  • 1 pint ice cream
  • ¼ c fresh raspberries
  • ¼ c crushed vanilla wafer cookies

Directions

  • In a small bowl, whisk together the limoncello and lemon curd.
  • In serving glasses or mason jars, add a scoop of ice cream, and top with a spoon of the limoncello mixture. Continue to layer all of the ingredients, and then top with fresh raspberries and crushed vanilla wafer cookies.
