Watermelon-Lime Granita

I love a watermelon margarita, and I love an icy treat, so I created this. One part popsicle, one part cocktail, this super-simple granita is a scrumptious ending to a summer meal—and, it’s fancy! The watermelon is refreshing, the lime gives it a kick, and the simple syrup makes that tequila go down real smooth. Honestly, the hardest part is waiting for it to freeze.

Watermelon-Lime Granita

Ingredients

  • 3 cups watermelon (about 1/8 of a large watermelon)
  • Juice of 2 limes
  • 1/2 cup simple syrup (To make: Boil 1 part sugar to 1 part water until combined)
  • 3/4 cup tequila
  • Fresh mint (optional)

Directions

  • Scoop out the watermelon, remove seeds, and puree in a blender.
  • Squeeze in limes. (Hint: Loosen up the juice by microwaving them for 10 seconds, then rolling on the counter.)
  • Add simple syrup and tequila, then blend to mix.
  • Pour the mixture into a shallow baking dish (the wider the better to speed up freezing). As ice starts to form around the edges, about every 30 minutes, scrape the ice towards the center to speed the process. Or leave the mixture in the freezer overnight instead.
  • Once it’s completely frozen, scrape the mixture with a fork to loosen it. Serve in chilled cups and garnish with mint, if desired.
