3 New Ways to Make Avocado Toast

People are obsessed with avocado toast. I’ve been eating it for years as an energy-boosting snack because avocado is high in protein, “good” fat, fiber and a bunch of other nutrients. And, it’s delicious. So now that you want to eat it every day, here are three twists on it to keep it interesting.

Clinton Kelly Mexican Avocado Toast

Mexican Style Avocado Toast

  • 2 slices whole grain bread, toasted
  • 1 ripe avocado
  • squeeze of lime juice
  • ¼ c pumpkin seeds, toasted (in a dry pan for about 30 seconds)
  • ¼ c cotija cheese, crumbled
  • 2 radishes, thinly sliced
  • flakey salt

Smash the avocado over the toast and squeeze the lime juice over the avocado. Top with the pumpkin seeds, cotija cheese, and radish. Sprinkle with salt and enjoy.

Sunny Cali Avocado Toast

  • 2 slices whole grain bread, toasted
  • 1 ripe avocado
  • squeeze of lemon juice
  • cucumber slices
  • sprouts (washed and dried)
  • ¼ c goat cheese
  • salt and pepper

Smash the avocado over the toast and squeeze the lemon juice over the avocado. Top with the cucumber, sprouts and dollops of the goat cheese. Sprinkle with salt and pepper.

Not-So-Healthy, Hearty Avocado Toast

  • 2 slices bread, toasted
  • 1 ripe avocado
  • 2 eggs, fried
  • 4 slices bacon, cooked & crumbled
  • hot sauce
  • salt and pepper

Smash the avocado over the toast and top with bacon and a fried egg. Give it a few dashes of hot sauce and some salt and pepper and enjoy.

This photo was taken the day my mom brought me back to the US from Panama, where I was born. She had jet-black hair and a tan, whereas I was basically translucent, with white hair and big blue eyes. Security guards stopped her in the airport because they thought she was smuggling someone else’s baby out of the country. So, I guess it’s time for everyone to come clean. I was indeed stolen.
