3 Quick and Easy Appetizers That Wow!

Don't you hate when your best friend from college shows up unannounced at your door. No need to run out and buy pricey gourmet food to impress the pants off of her. You can whip up these three appetizers with stuff you probably already have in your pantry right now. You don’t need to stress or spend a dime. Just be a fabulous hostess!

3 Easy Appetizers Beet Dip Clinton Kelly

Beet Dip


  • 2/3 c. plain Greek yogurt
  • 1 clove garlic
  • 1/2 tsp. cumin
  • 2 small beets (about 1/4 c., canned or frozen work just fine)
  • 1.5 oz. feta cheese, crumbled
  • Kosher salt and freshly cracked black pepper to taste
  • Parsley and extra feta, for garnish (optional)
  • Pita chips


  • Combine all ingredients in a food processor.
  • Serve with pita chips or chickpea chips.

Spicy Mini Meatballs


  • For the meatballs
  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1/2 c. breadcrumbs
  • 1/2 c. grated Parmesan
  • 1 lb. ground chuck beef
  • 1 1/2 tsp. crushed red pepper flakes
  • 1 tsp. hot sauce (such as Tabasco)
  • Kosher salt and freshly cracked black pepper to taste
  • For the spicy sauce
  • 2 tbsp. olive oil
  • 1/2 large yellow onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 tomato, seeded and chopped
  • 6 oz. ketchup
  • 1/4 c. cilantro, chopped
  • Kosher salt and freshly cracked black pepper to taste


  • Preheat oven to 400°F. Line a cookie sheet with parchment or greased foil.
  • In a large bowl, combine all ingredients for the meatballs. Roll meat mixture into 1-inch meatballs and bake for 15-20 minutes until golden and cooked through. Remove from oven and cool slightly.
  • While meatballs are cooking, heat the olive oil over medium-high heat in a medium sauté pan.
  • Add the onion and garlic, cook for 2 – 3 minutes, add the red pepper and cook for another 3 – 4 minutes.
  • Add the jalapeño, tomato, ketchup, cilantro, salt and pepper and simmer for 5 minutes.
  • Place a toothpick into each meatball and dip into spicy sauce before serving.

Spinach Artichoke Dip


  • 2 c. Parmesan cheese
  • 1 (10 oz.) box frozen chopped spinach, thawed
  • 1 (14 oz.) can artichoke hearts, drained and chopped
  • 2/3 c. sour cream
  • 1 c. cream cheese
  • 1/3 c. mayonnaise
  • 2 tsp. garlic, minced


  • Preheat oven to 375°F.
  • Mix together Parmesan cheese, spinach, and artichoke hearts.
  • Combine remaining ingredients and mix with spinach mixture. Pour into baking dish.
  • Bake for 20-30 minutes.
  • Serve with crackers or toasted bread
