Best Appetizer Ever: Bite-Size Meatloaf “Cupcakes”

Is it just me, or is meatloaf everyone else’s secret guilty pleasure, too? Moist, packed with flavor and perfection with a creamy dollop of mashed potatoes, it’s the ultimate comfort food. But something about a loaf is just not chic. Until now! These mini Meatloaf Cupcakes are amazing as appetizers, or have a meal of three or four of them. Mini Meatloaf Cupcakes

  • Yields 12 cupcakes
  • Prep time: 20 minutes
  • Cook time: 30 minutes


  • 1 c breadcrumbs
  • 2/3 c milk
  • 1 1/2 lb ground beef
  • 1/2 lb ground pork
  • ½ yellow onion, grated
  • 1 carrot, grated
  • 1 rib celery, grated
  • 2 cloves garlic, finely grated
  • 1 tsp dijon mustard
  • salt and pepper
  • 1/4 c ketchup
  • 4 c prepared mashed potatoes
  • chives

  • Preheat oven to 375 degrees F.
  • Combine the breadcrumbs and milk in a bowl; allow to soak while you mix everything else. Combine the meats, onion, carrot, celery, garlic and dijon mustard; season generously with salt and pepper. Add the breadcrumbs to the meat mixture, squeezing out excess milk first (discard), and mix with your hands until combined.
  • Lightly oil a mini muffin tin. Fill each muffin cup with the meatloaf mixture, mounding on top. Brush with ketchup and bake for 30 minutes, until the meatloaf is cooked through (it should read 165 degrees when measured with a meat thermometer).
  • Allow to cool slightly, and then using a piping bag or a ziptop bag with a ½-inch wide hole cut in the corner of the bag, pipe the mashed potatoes onto each meatloaf as you would icing on a cupcake.
  • Sprinkle with chives, and serve with extra ketchup.
