Cut the Carbs with this Creamy Cauliflower Rice Pilaf

Now that it's actually cold outside, we're craving comfort food to keep us warm in the winter months. This cauliflower “rice pilaf” has the delicious, creamy richness of comfort food without all of the guilt. AND it’s an excellent way to sneak vegetables into your family's diet. Soon, everyone will be craving cauliflower!

Cauliflower Rice Pilaf

Cauliflower Rice Pilaf

  • Serves 4 as a side
  • Prep Time: 10 minutes
  • Cook Time: 15 minutes


  • 2 tbsp olive oil
  • 1 shallot, diced
  • 2 gloves garlic, chopped
  • salt
  • freshly ground pepper
  • 1 large or 2 small heads cauliflower, grated on the large side of a box grater
  • ½ c chicken stock or water
  • ½ c golden raisins
  • ½ c slivered almonds
  • ¼ c chopped fresh parsley

  • In a large skillet over medium heat, add the olive oil, and once hot, add the shallot and garlic. Season with a pinch of salt and pepper and cook for a minute, until soft.
  • Add the grated cauliflower, and stir together. Cook for two to three minutes, just until the cauliflower softens slightly.
  • Add the stock or water, stir together and continue to cook another five minutes, until cauliflower is tender.
  • Fold in the raisins, almonds and parsley, and check seasoning, adjusting with more salt and pepper if needed. Serve and enjoy!
