These Chocolate Peanut Butter Cookies are Chewy, Delicious and Gluten-Free, Too!

If you’re a devoted reader of the site, you know we have a weakness for a chocolate peanut butter combo. Well if you do, too, then these cookies will be the best—and worst—thing I’ve ever introduced you to. They’re so stinkin’ easy to make, a kid could do it (no literally—our staffer makes these with her toddler) and guess what? They’re gluten-free! Now I am not saying they’re good for you, but they are the most delicious food on the planet. You’re welcome. And I’m sorry.

Chocolate Peanut Butter Cookies

  • 1 c creamy peanut butter
  • 1 c granulated sugar, plus more for dusting
  • 1 tsp baking powder
  • 1 egg
  • 1 c semisweet chocolate chips
  • nonstick baking cooking spray

  • Preheat your oven to 350 degrees F.
  • Beat together the sugar and peanut butter until well combined. Add the baking powder, mix, and then add the egg and mix until combined. Fold in the chocolate chips.
  • Using a rounded tablespoon or small ice cream scoop, make the cookies, lightly spraying the spoon with nonstick baking spray between each scoop, so that cookies release easily. Arrange on a parchment-lined cookie sheet. Dust the cookies with extra granulated sugar and then gently press with a fork to flatten. Bake for 10-12 minutes, until still slightly soft in the center. Cool slightly then transfer to a wire rack to cool completely.
